A simple, delicious and healthy avocado cucumber salad that’s perfect for lunch. Or any time you are in the mood for a salad.

Well, if you love avocados, this is one of the best ways to eat them! And for those who do not like them, this might also be a good way to try them again, and maybe it will make a difference.

Avacodos have always been one of my favorite fruits, but I wouldn’t say that’s the case for everyone. At least not for my daughter’s father. They are one of those fruits he can not stand, no matter how many new recipes you try with them, lol!

But now on to today’s topic, the avocado cucumber salad. I have to say that it’s one of the easiest salads to make.

You only need 7 ingredients, which you can easily find, and only takes 5 minutes or even less.

Ingredients to make avocado cucumber salad

Avocado: Use a half or whole avocado, if it is too small, peel it and dice it to add to your salad. 

Health benefits of avocadoes

Cucumber: Cucumbers are low in calories but contain many important vitamins and minerals and have a high water content. Therefore, they have many benefits, such as balanced hydration, regular digestion, and lowering blood sugar levels.

Red onion: I prefer red onions when it comes to salads. That’s because they have a really good, distinctive, and pleasing purple and white color to add appeal to your salad. 

Tomatoes: If you read up on the nutritional benefits of tomatoes, you’ll find that they’re an excellent source of vitamin C, which we all know is important for our health. So why not use them in this salad if you want to make sure that while you enjoy your avocado and cucumber salad, you are also doing something for your health!

Sweet corns: There’s no doubt that adding sweet corns to a salad makes it even more delicious. Whether you use fresh corn kernels or canned corn kernels is up to you. But I can assure you that your salad will be good either way.

Olive oil: Studies have shown that olive oil may be the best choice for a salad dressing. But not only that, it’s also one of the healthiest oils we can consume. A few tablespoons are enough to enjoy the taste and even the benefits that come with taking olive oil.

Pepper: A pinch of black pepper adds a little flavor to the avocado.

Avocado Cucumber Salad

  • 1/2 large avocado (or one small one)
  • 1/2 cucumber
  • 1 medium tomato or 6-7 cherries
  • 1 tin sweet corns
  • 1/2 red onion
  • 2 tbsp olive oil
  • A pinch of pepper


  • Clean your veggies, chop the onion, slice the cucumber into whatever shape you want, slice the avocado into cubes, and toss everything in a bowl.
    Add olive oil for the dressing and sprinkle some pepper on top.
    Enjoy your avocado cucumber salad!


You can also opt to add a pinch of salt to add a little more taste to avocado.
