In this case, I was trying to think of some protein to add to my salad, which has nothing to do with meat.
And that’s how yellow pea salad became part of some salads that I make now and then. Yellow peas are a great source of plant protein, making them an excellent food for people who don’t eat meat or animal products.

Ingredients
- 1 cup yellow peas
- 1/2 red onion
- 1/2 fresh lemon (juice)
- 1/2 cucumber
- 1 tomato (2 if small)
- 1/2 cup chopped coriander
- 1 tbsp olive oil (for dressing)
- Salt and pepper for taste
